Absolutely fine to reheat either using the microwave, oven or stove top. Just try not to overcook your shrimp or they will get tough. If possible, you might want to remove the shrimp and just heat the curry. Add the shrimp back into the hot curry and continue cooking until the shrimp are just heated through. I often remove the chicken or seafood from any food with sauce I am reheating so as not to overcook and dry out the seafood or chicken. I don't bother to do this with beef, lamb or pork.
